You will not believe how easy this meal is. I bet you never thought of mixing cornbread with tacos! This just might become a new family favorite!
INGREDIENTS
- 1 pound ground beef
- 1 package Taco seasoning
- 1 can Rotel
- 1 can whole kernel corn
- 1 can black beans
- 2 boxes Jiffy cornbread mix
- 2 eggs
- 2/3 cup milk
TOPPING IDEAS
- cheese
- shredded lettuce
- diced tomatoes
- jalapenos (pickled or regular)
- sour cream
- salsa (red or green or both)
DIRECTIONS
- Preheat the oven to 400F.
- Brown up your ground beef.
- While browning the beef it's a good time to add some seasonings such as Complete seasoning and garlic powder.
- Once the meat is all browned you can drain the grease.
- Add the package of Taco seasoning.
- Add 3/4 cup water.
- Toss the meat in the seasoning for a few minutes to mix it all up and keep it warm.
- Add the black beans, corn and Rotel. Keep on stirring while you're adding.
- Let this mix simmer for a few minutes.
- While it simmers you can mix up your cornbread using both boxes of Jiffy, eggs and milk.
- Spray down your casserole dish.
- Add your mixture and spread it all over the bottom evenly.
- Pour your cornbread mixture all over the top and gently cover the mixture.
- Cook this for about 20 minutes. Check it with a toothpick to make sure it's done. Once it comes out clean you're done.
- Let it cool for a few minutes. Then you're ready to "plate up".
- Add any toppings you'd like. This is a good time to have a bunch of toppings available and let each person do their own.
