- 1 (14 oz) can diced tomatoes
Cheese & Eggs
- 1 tbsp unsalted butter
- 10 eggs
- 3.5 oz shredded light cheddar cheese
- Salt & pepper, to taste
- Creamy Avocado Sauce (blend all ingredients):
- 1 ripe avocado
- 2/3 cup 0% Greek yogurt
- 1/4 cup low-fat milk
- 1 tsp honey
- Juice of 1/2 lime
- Salt & pepper, to taste

DIRECTIONS
