This is an easy recipe that will have you wanting more. Just a few ingredients...including bacon. Make sure to taste them as you go so you can adjust the ingredients to your liking. These take about an hour to cook; believe me, it's worth the wait.
INGREDIENTS
- 2 tbsp of chicken bullion
- 7 slices of bacon
- 1 large onion chopped
- 2 garlic cloves minced
- 1 tsp pepper
- 3 cups of water
- 3 bunches of fresh collard greens - picked, washed and cut
- 1 tsp red pepper flakes
- 1 tbsp white vinegar
- 1-2 tbsp brown sugar
- Hot sauce
DIRECTIONS
- Add bacon to a large skillet, and cook until crisp.
- Remove bacon from pan, crumble and set aside.
- Over medium heat, add onion to pan, and cook until tender, about 5 minutes.
- Add garlic, and cook until just fragrant.
- Add collard greens, and fry until they start to wilt.
- Pour in water, and add bullion, pepper, and red pepper flakes. Let simmer for 10 minutes
- Add in vinegar and sugar and hot sauce
- Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.
