This is a classic style red beans and rice recipe that is really easy to follow and packs that authentic down in the bayou taste!

INGREDIENTS

  • 1 lb. dry Red Beans or Kidney Beans
  • 2 tbsp cooking Oil 
  • 14 oz. Andouille sausage 
  • 1 Yellow Onion 
  • 1 Green Bell Pepper 
  • 3 Celery Stalks 
  • 4 tsp minced Garlic 
  • 2 tsp Smoked Paprika 
  • 1 tsp Dried Oregano 
  • 1 tsp Dried Thyme 
  • 1/2 tsp Garlic Powder 
  • 1/2 tsp Onion Powder 
  • 1/4 tsp Cayenne Pepper 
  • 1/4 tsp black Pepper
  • 2 Bay Leaves 
  • 6 cups water
  • 1/4 cup chopped fresh Parsley (dried will work)
  • 1 tbsp salt, or to taste
  • 3 Green Onions

TIP:

  • If you need to speed up the process and are short on time you could just use canned beans.  It'll obviously be slightly different than dry beans soaked overnight but it will still work.  You could then just make it in a pot on the stove or a slow cooker much faster.  Like people do with chili.  Throw everything into the slow cooker and let it go for a few hours on high.
