Easy, cheesy Mexican lasagna is made with a seasoned beef mixture that's layered between corn tortillas and cheese then baked until bubbly.
INGREDIENTS
- 1/2 small yellow onion
- 1lb lean ground beef
- 1 tbsp chili powder
- 1 tsp ground cumin
- 2 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 (14.5oz) can diced tomatoes
- 1 (15oz) can black beans, rinsed and drained
- 1 1/2 cups frozen sweet corn
- 1 (10oz) can enchilada sauce
- 12 8" large flour tortillas
- 12oz Mexican cheese blend
- 1 (4oz) can fire roasted diced green chiles
- 1 (6oz) can sliced olives
- 2 tbsp chopped cilantro
TIP: A popular twist is using Tortilla chips instead of flour tortillas.
