Sweet Potato Bread

This is a very simple way to make sweet potato bread. It is delicious by itself but like corn bread is even better with honey butter.

INGREDIENTS

  •  1 large sweet potato
  •  1 3/4 cups all purpose flour
  •  1 ¼ cups granulated sugar
  •  1/2 teaspoon nutmeg
  •  1/3 cup water
  •  1/3 cup vegetable oil
  •  1 teaspoon cinnamon
  •  2 large eggs
  •  1 teaspoon baking soda
  •  ¼ teaspoon baking powder
  •  ¼ cup raisins (optional)
  •  ¼ cup pecan (optional)
  •  3/4 teaspoon salt

DIRECTIONS

  1. Pre-heat oven to 350F.
  2. Peel and slice up the sweet potato.
  3. Cook the sweet potato until fork tender (about 20 minutes).
  4. Mash up the sweet potato.
  5. Add all of the rest of the ingredients.
  6. Mix everything together.
  7. Spray down the bread pan with non-stick spray.
  8. Pour the batter into the pan and put into the oven. 
  9. Cook for about 45 minutes. Until your toothpick comes out clean.
  10. Let it rest for about 10 minutes before removing from the bread pan.
  11. Top with some honey butter for the best treat!

 

This is an almost identical recipe BUT it is cooked in a pie plate like you would cornbread.  Cook time is slightly different.

INGREDIENTS

  • 2 medium sweet potatoes 
  • 2 room temperature eggs 
  • 1/4 cup of evaporated milk 
  • 4 tbsps of butter 
  • 1 cup of sugar 
  • 3 tbsps of flour 
  • 1 or 2 tsps of vanilla extract 
  • Sprinkle of cinnamon 

DIRECTIONS

  1. Bake sweet potatoes until soft on 350 degrees. (or boil like above)
  2. Mix all ingredients well and add to a buttered pie dish.
  3. Bake on 350 degrees for 35 to 40 minutes. Let cool and enjoy!
