Tomato Bruschetta with Balsamic Glaze

Fresh tomato and basil topping

  • 6 Roma Tomatoes (680g)
  • 20 fresh basil leaves (5g)
  • 3 garlic cloves
  • ½ shallot 
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • ¼ tsp salt
  • ⅛ tsp black pepper
  • 1 baguette
  • optional shredded parmesan cheese

  • 1 cup balsamic vinegar
  • ¼ cup honey (or brown sugar)
