The History of Brazilian Feijoada

We will be learning about and making Brazil's National Dish! Feijoada is a stew of beans with beef and pork. The name feijoada comes from feijão, 'bean' in Portuguese. It is widely prepared in the Portuguese-speaking world, with slight variations. The basic ingredients of feijoada are beans and fresh pork or beef. In Brazil, it is usually made with black beans.

INGREDIENTS

  • 2 lbs (5 cups) Beans 
  • 1 lb carne seca 
  • ½ pound fresh Stew meat
  • ½ pound Bacon (thick cut)
  • ½ pound Paio Sausages 
  • 1 pound Portuguese Sausage (Linguiça)
  • ½ pound Salt Pork 
  • 2 onions Chopped 
  • 1 teaspoon Black Pepper
  • 2 Tomatoes (Peeled/seeded/chopped)
  • 8 cloves Garlic crushed
  • 2 tablespoons white wine vinegar
  • 2 or 3 Bay leaves
