How to Make Perfect Cowboy Cookies

These Cowboy Cookies combine bakery-style cookie dough with oats, pecans, chocolate chips, and coconut for a thick, soft, and chewy cookie full of nutty goodness!

INGREDIENTS

  • 1 cup salted butter softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup quick oats
  • 2 cups semi-sweet chocolate chips
  • 3/4 cup chopped pecans
  • 3/4 cup unsweetened coconut flakes

DIRECTIONS

  1. Preheat oven to 400 degrees Fahrenheit. Line two baking sheets with parchment paper or a silicone baking mat.
  2. Using a hand mixer or stand mixer, beat 1 cup salted butter with 3/4 cup brown sugar and 1/2 cup granulated sugar. Mix until smooth and creamy, about 2 minutes.
  3. Add in 3 large eggs and 2 teaspoons vanilla extract and beat until just combined, about 30 seconds.
  4. Add in 2 3/4 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, and 1/2 teaspoon salt. Mix until just combined. Then add in 1 cup quick oats and mix until just combined.
  5. Pour in 2 cups semi-sweet chocolate chips, 3/4 cup chopped pecans, and 3/4 cup unsweetened coconut flakes and mix in using the paddle attachment or use a large spoon or rubber spatula to fold in.
  6. Divide the dough into about 12 equal pieces. Use hands to roll into large balls. Place onto prepared baking sheets, 6 per pan.
  7. Bake in the 400 degree oven for 10-12 minutes, until tops are golden brown.
  8. Let cool on pan 15 minutes before serving warm, or transfer to a wire rack to cool completely.
