Gumbo Collard greens
- 2 lb collard greens
- 1 onions
- 1 bell pepper
- 2 stalks celery
- 5 cloves garlic
- 1/2 tbsp salt free cajun
- 4 oz chicken andouille sausage
- 1 lb smoked turkey
- fat back or butter
- 1 tbsp butter
- 2 tsp better than bouillon
- 2 tbsp dry roux
- 1/2-1 tsp gumbo file
- 2 tsp sugar
- 1 cup okra
- scallions
- Creole seasoning
Corn Pudding
- 1 can sweet corn drained
- 2 cans cream corn
- 1/2 cup evaporated milk
- 1 12 oz bag frozen corn ( could also use 2 cans sweet corn instead
- 4 tbsp cornstarch
- 1 tsp vanilla extract
- 1/2 cup sugar
- 5 eggs
- 1/4 tsp nutmeg
- 1 stick butter
- 1/2 tsp salt
Cornbread
- 2 boxes Jiffy Cornbread
- 1 tsp honey (optional)
- 1 tbsp brown sugar ( optional) leave out if you don't like sweet cornbread
- 1 cup greek yogurt
- 2/3 cup whole milk
- 1 stick salted butter
- 2 eggs
- 1 tbsp shortening or lard for the skillet
