INGREDIENTS
- 1 box of Betty Crocker Spice Cake Mix
- 3 eggs
- 1/2 cup oil
- 1 15oz can of 100% pumpkin
- 1 tsp vanilla
DIRECTIONS
- Pre-heat oven to 350F.
- Mix all ingredients together.
- Fill cupcake pans half full.
- Cook at 350 for 12 minutes or until done.
- Let cool then frost with easy pumpkin buttercream frosting found below.
TIPS
- You can substitute the Spice Cake Mix for yellow or white cake mix and add 1 tsp ground cinnamon and 1/2 tsp pumpkin spice.

ICING INGREDIENTS
- 1 cup unsalted butter (room temperature)
- 1/2 cup pumpkin purée
- 1 tsp salt
- 1 1/2 tsp pumpkin spice
- 1/2 tsp cinnamon
- 6 cups confectioners sugar (pure cane)
(Optional: sprinkle a pinch of nutmeg on top after decorating cupcakes or cake)
