Salmon Croquettes

Easy enough for a weeknight and satisfying for a Sunday dinner.

INGREDIENTS

  • 2 (14.75) ounce cans salmon
  • 1 cup mixed color bell peppers, chopped (green, red and yellow)
  • 1/2 medium yellow onion, chopped
  • 1 shallot 
  • 2 eggs, lightly beaten
  • 1/4 cup all purpose flour
  • 1/2 cup mashed potatoes
  • 2 tbsp Pams Prep All-Purpose Seasoning
  • 2 tbsp pickled jalapeno liquid 
  • 1/2 cup yellow corn meal
  • 1/2 cup all purpose flour
  • 1 tbsp Pams Pre All-Purpose Seasoning 
  • green onions for garnish (optional)
